Job Summary:
To perform efficient and high-quality breakdown of pork carcasses into primals and value-added cuts, while maximising yield, minimising waste, and maintaining strict hygiene and food safety standards.
Minimum Requirements:
- Proven experience as a butcher (minimum 2 years preferred).
- Experience in pork processing and deboning is highly advantageous.

- Strong knife skills and cutting techniques.
- Knowledge of meat cuts and carcass breakdown.
- Understanding of yield and waste control.

Duties and Responsibilities:
- Carcass Breakdown and Processing: Break down pork carcasses into primals and retail cuts. Perform deboning, trimming, and portioning of meat. Ensure correct cutting techniques to maximise yield. Produce consistent, high-quality cuts according to specifications.
- Yield and Waste Control: Minimise trimming losses and unnecessary waste. Work accurately to improve overall carcass yield. Identify and report inefficiencies in cutting processes.
- Quality Control: Ensure all meat products meet company and customer standards. Maintain clean cuts with good presentation. Ensure correct portion sizes and product consistency.
- Hygiene and Food Safety: Follow strict hygiene and sanitation procedures. Comply with all food safety standards (HACCP principles). Maintain a clean and organised workstation. Ensure proper handling and storage of meat products.
- Production Efficiency: Work efficiently to meet daily production targets. Maintain a steady pace without compromising quality. Assist in improving workflow and reducing bottlenecks.
- Equipment Handling: Use knives, saws, and other equipment safely and correctly. Maintain sharp tools and report faulty equipment. Follow all safety procedures on the production floor.
- Teamwork: Work closely with production team and supervisors. Assist with training junior staff where required. Maintain a positive and professional attitude.
