Job Summary:

To assist in managing daily production operations within a pork processing facility, ensuring efficient carcass breakdown, optimal yields, strict cold chain compliance, and high-quality product output for both wholesale and distribution channels.

Minimum Requirements:

  • Diploma or Degree in: Production / Operations Management / Food Science (advantage).
  • 1–3 years in a production or manufacturing environment.
  • Experience in meat processing or food production is highly advantageous.
  • Computer Literacy: MS Office Suite.

Preferred Skills:

  • Strong attention to detail (especially yield & quality).
  • Basic understanding of meat cuts / willingness to learn quickly.
  • Leadership and team supervision ability.
  • Problem-solving and decision-making skills.
  • Ability to work in a cold environment.
  • Good communication and organisational skills.
  • Ability to work under pressure and meet daily targets.

Duties and Responsibilities:

  • Production and Yield Management:  Assist in planning and executing daily carcass breakdown schedules.  Monitor deboning lines to ensure maximum yield from each carcass.  Minimise waste and improve cut efficiency.  Ensure correct portioning and value-added processing.
  • Cold Chain and Food Safety:  Maintain strict cold chain control throughout production.  Ensure compliance with HACCP and hygiene standards.  Monitor product temperatures during processing and dispatch.  Identify and address any food safety risks immediately.
  • Staff Supervision:  Supervise and coordinate production staff (butchers, packers, general workers).  Allocate daily tasks and ensure productivity targets are met.  Assist with training in cutting standards and hygiene practices.  Manage attendance, discipline, and performance.
  • Quality Control:  Ensure all cuts meet required specifications and customer standards.  Monitor consistency in product grading and packaging.  Reduce customer complaints through strict quality oversight.
  • Stock and Material Control:  Monitor raw material usage (carcasses, packaging, additives).  Track yields and report variances.  Assist with stock counts and inventory management.
  • Equipment and Maintenance:  Ensure proper use of knives, saws, and processing equipment.  Report breakdowns and coordinate maintenance.  Minimise downtime on the production floor.
  • Dispatch and Logistics Support:  Coordinate with dispatch to ensure orders are fulfilled accurately.  Ensure products are correctly packed and labelled.  Assist in maintaining efficient delivery flow.
  • Reporting:  Record daily production volumes and yields.  Report on wastage, downtime, and staff productivity.  Assist in improving production efficiency and cost control.
